Carrot Kugel

Ingredients

4-6 carrots, sliced
1 cup sr flour
1/2 cup sugar
1/2 cup brown sugar
1/2 oil or apple sauce
2 eggs
1/2 tsp vanilla

Method

Put the carrot pieces in a saucepan and pour over water to cover. Boil for 25 mins or until tender, then drain and mash with a fork. Add the remaining ingredients and mix together.
Pour into a dish and bake at 180 for 45 mins.
